Chocolate and orange loaf

serves 8 to 10

260 g

Butter, softened


260 g

Caster sugar


300 g

Spelt flour, sifted


Baking powder

2 teaspoon


4

eggs, medium size


Zest of one orange


juice from one orange



Method

Preheat the oven to 190C Grease a 900 g loaf tine and line with baking paper

Mix flour and baking powder

Beat the soft butter and sugar until pale and add flour/baking powder, zest and juice and mix well. If the dough is too stiff add a bit of milk.

Turn the mixture into the tin and bake for 45 to 60 min until well risen and the top springs back when lightly pressed with a finger.

Leave to cool in the tin, then turn out and remove the paper.

for the icing mix 50g of butter with 25 g of cocoa powder, 2-3 tbsp orange juice and 100 icing sugar and mix well.

Spread the icing evenly over the top of the cake and serve in slices
