Feta & sunblush Tomato bread

makes one loaf

500g

Gilchesters Unbleached White flour


2 tsp

Salt


7 grams

dried yeast or 20g fresh yeast


1 tsp

Honey


200ml

Warm water


150ml

Lukewarm milk


250g

Feta cheese, cubed


Sun blush tomatoes, drained but keep some oil


Method

Dissolve the yeast and honey in about one third of the warm water in a small bowl. Add two tablespoons of the weighed flour and stir well. Leave in a warm place for 10-15 minutes to froth up.

Add the bubbly mix to the rest of the flour and gradually add the remaining liquid. Knead well for about 10 minutes, either by hand of by using a food processor. Put in a large oiled bowl and cover with a tea towel. Leave in a warm place for about 30 minutes until doubled in size.

Knock back the dough and knead in the cheese and tomatoes. Shape into two oblong loaves or a number of rolls and place on a floured baking sheet. Cover and leave in a warm place until well risen. Pre-heat to 220C

Brush the top with a little oil and bake for 25-30 minutes for loaves and 15-20 minutes for rolls. Cool on a rack.
