One Bowl Chocolate Loaf

Makes one loaf

115g

Unsalted butter


190g

Light brown sugar


100g

Granulated sugar

Large egg, at room temperature


235ml

Buttermilk


1 tsp

Vanilla extract

Gilchesters Organic Pizza & Ciabatta flour


60g

Dutch processed cocoa powder


1/2 tsp

Baking powder


1/2 tsp

Bicarbonate of soda


1/4 tsp

Fine sea salt


Method

Pre-heat the oven to 160C. Butter and lightly flour a 9 x 5 x 3 inch loaf tin. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugars and beat until fluffy (about 3 mins). Add the egg and beat well, then the buttermilk and vanilla. Don’t worry if the batter looks a little uneven. Sift the flour, cocoa, bicarb of soda and baking powder and salt together into your wet ingredients. Stir together with a spoon until well blended, but do not over-mix. Scrape down the batter in the bowl making sure the ingredients are well blended.

Pour the batter into the prepared loaf tin and bake for 60-70 mins or until a cake tester comes out clean. Cool in the tin for about 10 mins before turning out onto a wire rack. Drizzle with chocolate and enjoy a slice (or two!) with whipped cream and berries.
