Quick Spelt buns

Makes about 15 small buns


Gilchesters Organic Wholemeal Spelt Flour


Fast-acting dried yeast

1/2 tsp

Sea salt


Sunflower seeds


Sesame seeds

20g, plus a handful to sprinkle on top

Poppy seeds


Begin by pre-heating the oven to 200°C/gas mark 6.

Then make the bun dough. Put all the ingredients in a bowl, then add 500ml of warm water. Mix to a wet dough.

Butter a non-stick bun tray, or use greased squares of baking paper to line the holes. Spoon a heaped tablespoon of dough into each recess, then sprinkle with the poppy seeds.

Place in the oven immediately – these should take about 30 minutes to cook. As soon as you take them out of the oven, turn the buns out on to a rack and leave to cool with a tea cloth placed over them so they will not be too crisp.
