Spelt Banana Brownies

Makes 12 large or 16 small brownies


Ripe bananas


Large eggs

1 tsp

Vanilla extract

1 tbsp

Maple syrup


Gilchesters organic wholemeal spelt flour (any other wholemeal flour works too)

1/2 tsp

Baking powder

1/2 tsp

Bicarbonate of soda

1/4 tsp



Cacao powder

8 squares

Dark chocolate (optional)




Preheat the oven to 170°C, then grease and line an 8 inch square baking tin

Blitz together the bananas, eggs, vanilla extract and maple syrup until smooth (using either a soup stick or a blender).

Mix together the spelt flour, cacao powder, salt, bicarbonate of soda and baking powder in a large bowl. Pour in the banana mix.

Roughly chop the walnuts and dark chocolate. Stir in all the nuts and half the chopped chocolate, fold until well combined.

Pour the mixture into your prepared tin and smooth the top with a spatula. Sprinkle over the remaining chopped chocolate, and put in the oven for 20-25 mins, or until a skewer come out clean.

Leave to cool in the tin on a wire rack, cut into squares and enjoy.
