Super healthy soda bread

300 g

farmhouse flour

wholmeal wheat or spelt flour

oats


70 g

linseed

sunflower seeds

mixed nuts


1 tsp salt

honey


2 tsp

bicarbonate of soda


340 ml

buttermilk


100 -150ml milk

Method

Pre-heat oven to 180 C

Mix the dry ingredients in a large bowl and stir them through.

Add the honey, buttermilk and about 100 ml of milk and stir with a wooden spoon. Add just enough milk to bring the dough together. If you need more milk, only add a little at a time to ensure that the dough does not get too wet. Don’t over stir the mixture, just bring all the ingredients together.

Shape into a round and using the handle of the wooden spoon cut a deep cross into the top. Sprinkle some extra flour or oats on the top before putting it into the oven.

Bake for 30 minutes or until cooked through. Cool thoroughly on a cooling rack before cutting.
