unbleached white flour

eggs, medium


1

egg yolk, medium


225 ml

milk


goose fat to grease the tin


Method

Sift the flour into a bowl. Pre-heat oven to 200 C

Add the eggs, egg yolk and gradually mix in the milk. Stir until all lumps are dissolved.

Let the batter rest for 30 minutes.

Meanwhile put a little goose fat into the Yorkshire muffin tin and heat in the hot oven.

Pour the batter into the hot form and bake for 25 minutes.
