Ingredients
- 150g Gilchesters Wholemeal Rye Flour
- 100g Gilchesters Wholemeal Spelt Flour
- 2 tsp baking powder
- 50ml olive oil & extra for greasing
- 50g cocoa powder
- 2 eggs, large, beaten
- 200ml buttermilk
- 80ml Maple Syrup
- 3 ripe bananas, mashed
- 100g dark chocolate, roughly chopped
Method
Heat oven to 180C and grease a 900g loaf tin
In a large bowl combine all dry ingredients except the chocolate.
In a separate bowl whisk together the oil, eggs, buttermilk and maple syrup and fold in the mashed bananas. Pour in the wet ingredients onto the dry and combine. Add the chocolate and spoon the mixture into the prepared tin.
Bake in the oven for 50 to 65 min until a wooden skewer comes out clean. Leave to cool, than remove and cut into slice to serve.
You could replace the chocolate chunks with any nut if you like.
